Caramel sauce can be difficult to mix directly into cold milk. This recipe loosens it with warm espresso first, making the finished iced latte smoother and more consistent from top to bottom. A tiny pinch of salt is optional because many prepared caramel sauces already contain enough.

Make it

Place the caramel sauce in a heatproof cup and add a small splash of freshly brewed espresso. Stir until smooth, then mix in the remaining coffee. Taste a cooled spoonful before adding the optional salt. Allow the mixture to cool while you prepare the serving glass.

If you want a caramel stripe, draw a little sauce around the inside of the glass. Add ice and the cold milk. Pour the cooled caramel coffee over the top, then stir well. The decorative sauce may dissolve gradually; it is extra sweetness, so leave it out when you want to judge the base recipe accurately.

Start with less caramel than a café-style dessert drink might contain. You can stir in more after tasting, but removing sweetness is much harder. If the coffee feels lost, reduce the milk slightly on your next attempt or choose an espresso you already enjoy in milk.

For a blended texture, this mixture can be processed with ice in a blender designed for crushing ice, but that creates a different recipe with a faster-melting finish. The simple poured version is easier to reproduce and needs less cleanup. Keep milk refrigerated before serving and avoid making a large pitcher that will sit out while people help themselves. Add caramel exclusively in a cup or glass; it must not go into the machine's water tank, grinder, or milk system. Serve with a spoon so the final sips can be mixed again if needed.

Make caramel an accent you can repeat

Caramel sauces differ in sweetness, thickness and saltiness. Use the same sauce for your first few attempts and measure it before decorating the glass. The optional stripe can contribute enough sweetness to change the drink, so leave it out while establishing your baseline. Once the plain version is balanced, add a light stripe on another occasion and assess whether the base needs slightly less sauce.

If caramel sticks to the spoon or collects in a cold lump, work it into a small portion of warm espresso first. That concentrated mixing step is easier to control than stirring thick sauce into a full glass of chilled milk.
