The idea

Coffee cubes turn a glass of cold milk into a gradually changing iced coffee. They are useful when you want to sip slowly, although they make the drink stronger as they melt rather than holding it at one fixed balance. A little fresh coffee at the start prevents the first few sips from tasting only of milk.

Freeze plain brewed coffee in a clean ice tray, following the tray's instructions. Measure the tray's capacity with water if you want repeatable portions. Cube size affects how quickly the drink changes, so use the same tray when comparing versions.

Make it

Pour the cooled coffee into the tray and freeze until solid. Keep the cubes covered once frozen so they are protected from surrounding freezer odors. To assemble the drink, dissolve the sugar in the hot water in a separate cup and stir in the vanilla. Let that small syrup cool.

Put the coffee cubes in a glass. Combine the chilled coffee, cold milk, and vanilla syrup, then pour the mixture over the cubes. Stir and taste. The initial drink is deliberately milky because the cubes will contribute more coffee as they soften.

Make it your own

For a bolder first sip, use 80 ml chilled coffee and 100 ml milk while keeping the cubes unchanged. For a gentler drink, use fewer coffee cubes and add some ordinary ice. Record both the liquid recipe and the number of cubes; otherwise, two apparently identical glasses can develop very differently.

This is also a useful way to plan an iced coffee break without brewing at serving time. Cool and store brewed coffee appropriately before freezing, and keep milk refrigerated until needed. Do not use the recipe as a reason to leave old coffee standing at room temperature. All vanilla and sugar are mixed outside the machine. If serving guests, explain that the cubes contain coffee so they understand why the flavor grows stronger. A long spoon lets them keep the melting coffee evenly distributed through the milk.

Design the first sip and the last

Coffee cubes make this drink evolve instead of merely diluting. Taste the assembled glass once before the cubes have softened much, then stir and taste again later. Decide which stage you enjoy most. If the opening is too milky but the finish is ideal, change the initial liquid ratio next time rather than adding more cubes. If the finish becomes too intense, replace some coffee cubes with ordinary ice.

Measure what goes into the tray and note how many cubes it produces. Cube counts only help if their sizes are consistent; four large cubes and four small cubes can represent very different amounts of coffee. When you find a favorite recipe, write the approximate coffee volume represented by the cubes alongside the liquid measurements. That makes it easier to repeat with another tray.

This is a useful make-ahead format for a planned coffee break, but the preparation still deserves care. Keep frozen coffee covered and clearly identified, and organize the chilled assembly ingredients before taking out the cubes. Use a spoon long enough to mix the bottom of the glass as the coffee melts into the milk, particularly when serving it in a tall vessel.

Can I freeze sweetened coffee for the cubes?

You can experiment, but the recipe uses plain coffee so sweetness remains easier to adjust in the glass. Sweetened cubes would change both coffee intensity and sweetness as they melt.

Why does the drink get stronger over time?

The melting cubes release additional coffee. That is the intended behavior. Stir occasionally and use a mixture of coffee cubes and ordinary ice if you prefer a gentler change.
