Affogato is a dessert of contrasts: cold ice cream, hot coffee, and a mixture that changes from spoonful to spoonful. This version adds a little hazelnut crunch, served at the last moment so it stays crisp. It is deliberately small and works well after a meal when a large dessert would feel unnecessary.

Make it

Toast the chopped hazelnuts in a dry pan, stirring until fragrant. Add the brown sugar and stir briefly so it clings in places, then spread the nuts on a plate to cool. Do not leave the pan unattended; the small pieces can darken quickly. Prepare this topping before scooping the ice cream.

Place a scoop of ice cream in each bowl. Brew the espresso into a small pouring vessel and bring the bowls to the table. Pour half the espresso around each scoop, sprinkle with the cooled hazelnut mixture, and serve immediately with spoons. Add chocolate shavings only if you want another layer of richness.

Time the dessert around the espresso

Have the bowls, spoons and cooled topping ready before you scoop the frozen dessert. The coffee is the final action, not the starting point for several minutes of assembly. If you are serving two people, bring both bowls to the table together and divide the espresso deliberately. A small pouring vessel is easier to control than trying to move the machine directly over individual dessert dishes.

The topping should supply contrast without covering the scoop completely. Keep a little in a separate dish so each person can add more. If the first spoonful is mostly nuts and sugar, the topping is doing too much work.
